Dinner in a Pumpkin?


What is Dinner in a Pumpkin you ask? It is a delicious yummy Halloween treat! Why not send your kids out trick or treating with a warm yummy soup in their bellies! It is easy and SO good! Russ and I have made it EVERY Halloween since we have been married it is our favorite Halloween tradition!

Ingredients:
1 (10-12 inch) pumpkin
3 c. cooked rice
1 lb. browned hamburger
1/4 c. soy sauce
1/4-1/2 c. brown sugar
1 can of mushrooms (we use fresh but whatever you prefer)
1 can cream soup (chicken, celery, or mushroom whatever you prefer)
1 1/2 c. chopped celery
1 Tbsp. butter
1 c. onion (chopped)
(we also add a can of corn but that is optional)

Brown hamburger. Cook rice according to pkg. directions. Saute celery and onion in butter. Stir all ingredients together and place in cleaned pumpkin. Put pumpkin 'lid' on top. Place on cookie sheet. Bake at 350 for 1-1 1/2 hours. When serving, scrape cooked pumpkin off sides to eat, too!

Can use permanent marker to make a jack-o-lantern face on pumpkin.

I like to garnish it with sour cream!

thanks for posting this... i was wondering about it...I will try it out, sounds good! Do you guys only do this on halloween or is it so good you do it more than once?

It is YUMMY but we only do it on Halloween, it keeps a fun 'special' tradition, there are other variations though, when I taught at East Elementary they did it with their second graders every year and it was a completely different recipe, tomato soup base and mixed veggies with hamburger if I am not mistaken. You could just make it a fun 'fall' meal I guess and have it all the time.

I'll have to try this...looks better than the one they do in 2nd grade....I think.
